A Grammar Question

This is not a test.
Why is it appropriate to say, "The class thinks I am a good teacher."
But at the same time it is correct to say, "The students think I am a good teacher."
Aren't the subject (or subjects?) of both sentences plural?
And if someone asks, "How did you do on the test?" the right way to respond is, "I did well."
But what should you say when someone asks, "How are you?" "I'm well." or "I'm good."
"How is the pie?"
"Good" or "Well?"
"Good" right? Why does the adjective change and what is the rule?
* And just for fun, are there any grammatical rules that make you twitch when they're neglected or abused?
