Mac users who have OSX Yosemite installed on their machines can now make iOS screencasts using either Apple's built in functionality or TechSmith's new application, AppShow Technical Preview. Both options require a device running iOS 8 or later and tethering (using a Lightning cable) to a machine running Yosemite during the recording process. Amongst other uses, this new screencasting option could be an iPad-based alternative to a document camera.
